    Abstract:

    Mushroom poisoning is one of the most serious food safety problems in our country. More than 90% of deaths from mushroom poisoning are due to accidental ingestion of mushrooms containing amanitin. At present, many studies have focused on the toxicological mechanism, toxicokinetics, and treatment of amanitin poisoning, but comprehensive reviews on the establishment of animal models for various purposes are limited. Therefore, in accordance with the purpose and content of the experiment, this article reviews animal selection, types of poison and drugs, and injection method and doses to provide a theoretical basis and reference to establish animal models of amanitin poisoning.
